House keeper....big business or under the table?

I am looking for a house cleaner to come in once a month or so and deep clean. I know a few people that have "cleaning ladies" that they either know through friends, church, etc, and they pay them under the table. My question is, is it worth it to have
someone in your home you might trust a little more (since the referral is through a friend), pay a little less (under the table of course) or should I pay like double to go with like Merry Maids or something so that I have the peace on mind that they are insured,
and if there is an issue, I can deal with the business manager, rather than the friend of a friend. I want to save all the money I can, but my worst fear is that I hire someone under the table gets hurt at my house, and I am liable. Or could I have the under
the table person sign a letter stating that if he/she gets injured at my home I am not liable? Help! Sincerely, Cheapskate.
