After the game is technically finished, there is still a lot to consider before calling the project ready for players. I’m interested in what a professional development process usually includes near the final stage. Besides fixing obvious bugs, should the team also focus on balancing gameplay, improving performance, polishing animations, testing different devices, refining the interface, and checking the overall player experience before the game is released?

Finishing the programming does not necessarily mean that a game is ready for players. The final stage should include extensive QA, performance optimization, device testing, gameplay balancing, interface improvements and animation polishing. I would also leave enough time to identify small issues that can significantly affect the player experience.
